Description

A warm and tangy German Potato Salad featuring crispy bacon and tender baby potatoes, perfect for any gathering.


Ingredients

  • 1 pound baby potatoes
  • 6 strips bacon, chopped
  • 1 medium onion or shallot, chopped
  • 1/4 cup fresh chives, chopped
  • 1/4 cup apple cider vinegar or white wine vinegar
  • 2 tablespoons Dijon mustard
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in salted water until fork-tender, about 15-20 minutes, then drain and slice.
  2. Cook the bacon in a frying pan over medium heat until crispy, about 7-8 minutes; drain and chop.
  3. Sauté the onions or shallots in the bacon fat until softened, about 3-4 minutes.
  4. Make the dressing by whisking together vinegar, mustard, olive oil, salt, and pepper.
  5. Combine the warm potatoes, bacon, sautéed onions, and chives in a large bowl.
  6. Dress the salad with the dressing and gently toss to combine. Serve warm or at room temperature.
