Ingredients

- 1 pound baby potatoes
- 6 strips bacon, chopped
- 1 medium onion or shallot, chopped
- 1/4 cup fresh chives, chopped
- 1/4 cup apple cider vinegar or white wine vinegar
- 2 tablespoons Dijon mustard
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions
- Boil the potatoes in salted water until fork-tender, about 15-20 minutes, then drain and slice.
- Cook the bacon in a frying pan over medium heat until crispy, about 7-8 minutes; drain and chop.
- Sauté the onions or shallots in the bacon fat until softened, about 3-4 minutes.
- Make the dressing by whisking together vinegar, mustard, olive oil, salt, and pepper.
- Combine the warm potatoes, bacon, sautéed onions, and chives in a large bowl.
- Dress the salad with the dressing and gently toss to combine. Serve warm or at room temperature.
