Description

A classic German Potato Salad featuring crispy bacon, tender baby potatoes, and a tangy mustard dressing, perfect for any gathering.


Ingredients

  • 1 lb Baby Potatoes
  • 6 strips Bacon
  • 1/2 cup Diced Onions
  • 1/4 cup Diced Shallots
  • 1/4 cup Chopped Chives
  • 1/2 cup Apple Cider Vinegar
  • 2 tbsp Dijon or Whole-Grain Mustard
  • 2 tbsp Olive Oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Boil the potatoes in salted water until fork-tender, about 12–15 minutes. Drain and cool slightly.
  2. Cook the bacon in a skillet over medium heat until crispy. Remove and crumble.
  3. Sauté the onions and shallots in the same skillet for about 3–4 minutes.
  4. Make the dressing by whisking together vinegar, mustard, olive oil, salt, and pepper.
  5. Combine the cooled potatoes with the dressing in a mixing bowl.
  6. Add the sautéed onions, crumbled bacon, and chopped chives, folding gently.
  7. Serve warm or at room temperature.

The salad stays flavorful when prepared a few hours in advance. Can be served warm or at room temperature.
