A classic German Potato Salad featuring crispy bacon, tender baby potatoes, and a tangy mustard dressing, perfect for any gathering.
Ingredients

- 1 lb Baby Potatoes
- 6 strips Bacon
- 1/2 cup Diced Onions
- 1/4 cup Diced Shallots
- 1/4 cup Chopped Chives
- 1/2 cup Apple Cider Vinegar
- 2 tbsp Dijon or Whole-Grain Mustard
- 2 tbsp Olive Oil
- Salt to taste
- Pepper to taste
Instructions
- Boil the potatoes in salted water until fork-tender, about 12–15 minutes. Drain and cool slightly.
- Cook the bacon in a skillet over medium heat until crispy. Remove and crumble.
- Sauté the onions and shallots in the same skillet for about 3–4 minutes.
- Make the dressing by whisking together vinegar, mustard, olive oil, salt, and pepper.
- Combine the cooled potatoes with the dressing in a mixing bowl.
- Add the sautéed onions, crumbled bacon, and chopped chives, folding gently.
- Serve warm or at room temperature.
Notes
The salad stays flavorful when prepared a few hours in advance. Can be served warm or at room temperature.
