Ingredients

  • 2 cups granulated sugar
  • 1/2 cup milk
  • 1/2 cup butter
  • 1/4 cup cocoa powder
  • 1/2 cup creamy peanut butter
  • 3 cups quick oats
  • 1 tsp vanilla extract

Instructions

  1. In a medium saucepan, combine sugar, milk, butter, and cocoa powder. Bring the mixture to a rolling boil over medium heat. Boil for exactly one minute, stirring constantly to avoid burning.
  2. Remove from heat and stir in creamy peanut butter and vanilla extract. Mix until everything is melted and smooth.
  3. Gradually fold in quick oats, ensuring every oat is coated with the mixture.
  4. Using a spoon, drop heaping spoonfuls of the mixture onto sheets of wax paper. Allow them to cool at room temperature until set, which takes around 30 minutes.

Notes

For a richer cookie, experiment with a little more cocoa or an extra scoop of peanut butter.
