A tender, moist coffee cake made with Greek yogurt, perfect for breakfast or dessert.

- 1 cup Greek yogurt
- 1 cup sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup chopped nuts or chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan generously to prevent sticking.
- Cream together the softened butter and sugar in a large mixing bowl until light and fluffy, about 3-5 minutes.
- Add the eggs, one at a time, mixing well after each addition, then incorporate the Greek yogurt and vanilla extract until smooth.
- Whisk together the flour, baking powder, baking soda, and salt in another bowl. Gradually add this dry mixture to the wet ingredients, stirring gently until just combined.
- Fold in your chopped nuts or chocolate chips gently if using.
- Pour the thick batter into the prepared baking pan, spreading it evenly with a spatula.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow your cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
Make the batter a day ahead and refrigerate; allow to reach room temperature before baking. Avoid over-mixing the batter.
