Description

A tender, moist coffee cake made with Greek yogurt, perfect for breakfast or dessert.


Ingredients

  • 1 cup sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan generously to prevent sticking.
  2. Cream together the softened butter and sugar in a large mixing bowl until light and fluffy, about 3-5 minutes.
  3. Add the eggs, one at a time, mixing well after each addition, then incorporate the Greek yogurt and vanilla extract until smooth.
  4. Whisk together the flour, baking powder, baking soda, and salt in another bowl. Gradually add this dry mixture to the wet ingredients, stirring gently until just combined.
  5. Fold in your chopped nuts or chocolate chips gently if using.
  6. Pour the thick batter into the prepared baking pan, spreading it evenly with a spatula.
  7. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow your cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Make the batter a day ahead and refrigerate; allow to reach room temperature before baking. Avoid over-mixing the batter.
