Description

A vibrant side dish featuring tender-crisp green beans coated in buttery toasted almonds and brightened with fresh lemon juice.

Ingredients

Scale
  • 1 pound green beans, trimmed
  • 2 tablespoons butter
  • 1/4 cup sliced almonds
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Blanch the green beans: In a large pot, bring salted water to a rolling boil. Add the trimmed green beans and cook for 3 to 4 minutes until their color transforms into a brilliant green and they achieve that tender-crisp texture. Promptly drain them and plunge them into a bowl of ice water to halt the cooking process.
  2. Toast the almonds: Heat your skillet over medium heat, then melt the butter. Once the butter sizzles, sprinkle in the sliced almonds. Stir them for about two minutes until golden brown.
  3. Combine the ingredients: Drain the green beans from the ice bath. Add them to the skillet with the toasted almonds and gently toss to coat. Heat for a minute over low heat.
  4. Finish with lemon and seasoning: Drizzle with fresh lemon juice and sprinkle salt and pepper. Toss once more and serve warm.

Notes

For a make-ahead option, blanch green beans in advance and refrigerate. Reheat before serving. Avoid overcooking the beans to maintain their vibrant color.
