Instructions
- Marinate the Chicken: In a mixing bowl, whisk together soy sauce, brown sugar, and coconut milk. Add chicken thighs, ensuring they coat thoroughly. Let marinate for at least 30 minutes.
- Heat the Skillet: Place a large skillet over medium heat and add the vegetable oil, allowing it to warm thoroughly.
- Cook the Chicken: Remove the chicken from the marinade, reserving the marinade for later. Place the chicken in the skillet and cook for about 5-7 minutes per side or until fully cooked. Once done, remove the chicken and set aside.
- Create the Rice Base: In the same skillet, add the reserved marinade and bring it to a gentle boil. Add the jasmine rice along with water (according to package instructions). Reduce heat to low, cover, and simmer until the rice has absorbed all the liquid and is fully cooked.
- Fluff the Rice: Once cooked, use a fork to fluff the rice, ensuring it’s light and airy.
- Plate and Serve: Serve the warm coconut rice on plates, topping each serving with the succulent chicken.
- Garnish: Sprinkle chopped green onions over the top and add pineapple chunks for an extra tropical touch.
