Ingredients

- 1 ½ cups all-purpose flour (or whole wheat flour)
- ½ cup sugar (or brown sugar, honey, or maple syrup)
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ⅓ cup vegetable oil (or melted coconut oil)
- 1 large egg
- 1 cup buttermilk (or milk with vinegar/lemon juice)
- 1 cup fresh or frozen blueberries
Instructions
- Preheat your oven to 350°F (175°C) and line muffin tin with paper liners.
- Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
- Mix vegetable oil (or melted coconut oil), egg, and buttermilk in another bowl.
- Pour the wet mixture into the dry ingredients and stir until just combined.
- Fold in the blueberries gently with a spatula.
- Divide the batter equally among muffin cups, filling each about ⅔ full.
- Bake for 15-20 minutes, checking doneness with a toothpick.
- Allow muffins to cool in the pan for a few minutes before transferring to a wire rack.
Notes
For a different flavor, try using raspberries or dark chocolate chips. Make-ahead tips: Batter can be stored in the fridge overnight.
