Description

Delicious and wholesome blueberry muffins that are perfect for breakfast or a snack.


Ingredients

  • 1 ½ cups all-purpose flour (or whole wheat flour)
  • ½ cup sugar (or brown sugar, honey, or maple syrup)
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ⅓ cup vegetable oil (or melted coconut oil)
  • 1 large egg
  • 1 cup buttermilk (or milk with vinegar/lemon juice)
  • 1 cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and line muffin tin with paper liners.
  2. Whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
  3. Mix vegetable oil (or melted coconut oil), egg, and buttermilk in another bowl.
  4. Pour the wet mixture into the dry ingredients and stir until just combined.
  5. Fold in the blueberries gently with a spatula.
  6. Divide the batter equally among muffin cups, filling each about ⅔ full.
  7. Bake for 15-20 minutes, checking doneness with a toothpick.
  8. Allow muffins to cool in the pan for a few minutes before transferring to a wire rack.

Notes

For a different flavor, try using raspberries or dark chocolate chips. Make-ahead tips: Batter can be stored in the fridge overnight.
