Ingredients

  • 1 whole wheat tortilla
  • 1 cup cooked chicken, shredded
  • 1/2 cup black beans, rinsed and drained
  • 1/2 cup corn, canned or frozen
  • 1/2 cup diced tomatoes
  • 1/4 cup Greek yogurt
  • 1/4 cup shredded lettuce
  • 1/4 cup shredded cheese (optional)
  • 1 tablespoon taco seasoning
  • Olive oil for cooking

Instructions

  1. In a bowl, mix the shredded chicken with taco seasoning.
  2. Lay the whole wheat tortilla flat on a clean surface.
  3. In the center of the tortilla, layer the chicken, black beans, corn, diced tomatoes, Greek yogurt, lettuce, and cheese.
  4. Fold the sides of the tortilla inwards, then roll it up tightly from the bottom to the top.
  5. Heat a skillet over medium heat and add a little olive oil.
  6. Place the wrap seam-side down in the skillet and cook until golden brown, about 3-4 minutes.
  7. Flip the wrap and cook the other side until golden brown and crispy.
  8. Remove from the skillet, slice in half, and serve warm.
