- 1 lb ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups cabbage, chopped
- 3 carrots, sliced
- 2 celery stalks, chopped
- 1 can diced tomatoes (14 oz)
- 4 cups beef broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Brown the ground beef in a skillet over medium heat until it’s nicely seared. Drain the excess fat.
- Transfer the browned beef into the crockpot. Add in the chopped onion and minced garlic.
- Toss in the cabbage, sliced carrots, chopped celery, and diced tomatoes.
- Pour in the beef broth and sprinkle the Italian seasoning. Season with salt and pepper.
- Cover the crockpot and set it to cook low for 7-8 hours or high for 4-5 hours.
- Stir the mixture before serving, adjusting seasoning if needed, and ladle into warm bowls.
Notes
Consider browning the meat and chopping the veggies the night before for easier preparation. Substitute with seasonal vegetables for variety.
