Instructions
- Preheat your grill or oven to 400°F (200°C).
- Cut the chicken breasts into bite-sized pieces.
- Combine the chicken, chopped bell peppers, zucchini, red onion, and minced garlic in a mixing bowl.
- Drizzle with olive oil and lemon juice, then sprinkle with oregano, salt, and pepper.
- Toss everything together until well coated.
- Prepare sheets of aluminum foil, roughly 12×12 inches, and divide the chicken mixture among them.
- Gather the edges of the foil and seal the packets tightly, leaving some space for steam.
- Grill or bake for 25-30 minutes, checking the internal temperature of the chicken.
- Open the packets carefully, sprinkle with feta cheese and chopped parsley before serving.
Notes
