Instructions

  1. Preheat your grill or oven to 400°F (200°C).
  2. Cut the chicken breasts into bite-sized pieces.
  3. Combine the chicken, chopped bell peppers, zucchini, red onion, and minced garlic in a mixing bowl.
  4. Drizzle with olive oil and lemon juice, then sprinkle with oregano, salt, and pepper.
  5. Toss everything together until well coated.
  6. Prepare sheets of aluminum foil, roughly 12×12 inches, and divide the chicken mixture among them.
  7. Gather the edges of the foil and seal the packets tightly, leaving some space for steam.
  8. Grill or bake for 25-30 minutes, checking the internal temperature of the chicken.
  9. Open the packets carefully, sprinkle with feta cheese and chopped parsley before serving.
