- 2 cups all-purpose flour
- 1 cup active sourdough starter
- 1 teaspoon salt
- 1 tablespoon sugar
- ¾ cup water
- 1 tablespoon baking soda
- Cornmeal (for dusting)
- Optional toppings (sesame seeds, poppy seeds, everything bagel seasoning)
Instructions
- Combine 2 cups of all-purpose flour, 1 cup of active sourdough starter, 1 teaspoon salt, 1 tablespoon sugar, and ¾ cup water in a large mixing bowl. Mix until a shaggy dough forms.
- Knead the dough for about 10 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover, and let rise for 4-6 hours or until doubled in size.
- Punch down the dough, divide into 8 portions, and shape each into a bagel.
- Rest the bagels for 30 minutes while preheating the oven to 425°F (220°C).
- Boil a large pot of water, add 1 tablespoon baking soda, and boil the bagels for about 1 minute each.
- Remove and place the boiled bagels on a cornmeal-dusted baking sheet, adding desired toppings.
- Bake in the preheated oven for 20-25 minutes until golden brown.
- Cool slightly on a wire rack before serving.
Notes
For best results, use an active sourdough starter and allow for adequate rise time for flavor development.
