Description

Delicious savory pastries filled with ground beef, cabbage, and onions, all wrapped in homemade sourdough.


Ingredients

  • 2 cups sourdough starter
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 pound ground beef
  • 1 cup cabbage, chopped
  • 1 onion, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 egg (for egg wash)

Instructions

  1. Whisk together the sourdough starter, milk, and melted butter in a large bowl until combined.
  2. Sprinkle in the salt, and gradually fold in the flour one cup at a time until you create a soft, slightly sticky dough.
  3. Knead the dough on a lightly floured surface for 5-7 minutes until smooth and elastic.
  4. Allow it to rise in a warm area for 1-2 hours, or until it doubles in size.
  5. Heat a skillet over medium heat, then add the chopped onions and cook until translucent.
  6. Mix in the ground beef and cook until browned.
  7. Fold in the diced cabbage, garlic powder, salt, and pepper, stirring until the cabbage softens.
  8. Preheat your oven to 375°F (190°C).
  9. Roll out the dough on a floured surface to approximately 1/8-inch thick.
  10. Spoon a generous portion of the savory beef mixture into the center of each piece.
  11. Fold the dough over to enclose the filling, pinching the edges tightly.
  12. Place each Runza on a parchment-lined baking sheet, brush with egg wash.
  13. Bake for 20-25 minutes, or until golden brown.

Notes

Customize your filling by adding vegetables like carrots or bell peppers. Make-ahead option for the filling available.
