- 1 cup almond flour
- 1/4 cup erythritol (or preferred sweetener)
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 2 large eggs
- 1/4 cup unsweetened applesauce
- 2 tbsp coconut oil (melted)
- 1 tsp vanilla extract
- 2 tbsp granulated erythritol (for coating)
- 1 tsp cinnamon (for coating)
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease your donut pan.
- In a mixing bowl, combine almond flour, erythritol, baking powder, cinnamon, and salt. Whisk together thoroughly.
- In a separate bowl, whisk the eggs until fluffy, then add unsweetened applesauce, melted coconut oil, and vanilla extract. Blend until smooth.
- Pour the wet ingredients into the dry mixture and gently mix until just combined. Do not overmix.
- Using a spoon or piping bag, fill each cavity of the donut pan about 3/4 full with batter.
- Bake in the preheated oven for 15-20 minutes or until a toothpick comes out clean.
- Remove the pan from the oven and let the donuts cool for a few minutes before transferring them to a wire rack.
- While the donuts cool, mix erythritol and cinnamon in a shallow dish.
- Once the donuts are slightly warm, roll them in the cinnamon-sugar mixture until fully coated. Enjoy immediately!

Store in an airtight container for up to a week or freeze for longer storage. Reheat in the microwave or air fryer.
