Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper.
  2. Whisk together the flour, baking powder, and salt in a medium bowl and set aside.
  3. Beat the butter and sugar in a mixing bowl until light and fluffy, around 3-5 minutes.
  4. Add the eggs, one at a time, incorporating each fully.
  5. Stir in the milk, lime zest, lime juice, and vanilla extract until well combined.
  6. Gradually mix the dry ingredients into the wet mixture, folding gently until just combined.
  7. Pour the batter into the prepared pan, smoothing the top.
  8. Bake for 25-30 minutes or until a toothpick comes out clean from the center.
  9. Let the cake cool completely in the pan before transferring to a wire rack.
  10. Whip together the heavy cream and powdered sugar until stiff peaks form, then fold in lime zest.
