Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper.
- Whisk together the flour, baking powder, and salt in a medium bowl and set aside.
- Beat the butter and sugar in a mixing bowl until light and fluffy, around 3-5 minutes.
- Add the eggs, one at a time, incorporating each fully.
- Stir in the milk, lime zest, lime juice, and vanilla extract until well combined.
- Gradually mix the dry ingredients into the wet mixture, folding gently until just combined.
- Pour the batter into the prepared pan, smoothing the top.
- Bake for 25-30 minutes or until a toothpick comes out clean from the center.
- Let the cake cool completely in the pan before transferring to a wire rack.
- Whip together the heavy cream and powdered sugar until stiff peaks form, then fold in lime zest.
- Spread the frosting evenly over the cooled cake and serve.
