Ingredients

  • 500g Bread Flour
  • 350g Water
  • 100g Active Sourdough Starter
  • 10g Salt

Instructions

  1. Combine the bread flour and water with your active sourdough starter in a large bowl.
  2. Mix until there’s no dry flour left; expect a shaggy, messy mixture.
  3. Let this mixture rest for 30 minutes to allow flour to absorb water.
  4. Add the salt to the dough and mix by squeezing until fully incorporated.
  5. Cover the bowl with a damp cloth and let the dough rise at room temperature for 4-6 hours.
  6. Preheat your oven to 450°F (230°C), placing your Dutch oven inside to heat up.
  7. Transfer the dough to a floured surface and gently shape it into a round loaf.
  8. Let the shaped loaf rest while your oven continues to preheat.
  9. Remove the Dutch oven carefully, place the dough inside, cover it with the lid, and bake for 30 minutes.
  10. Remove the lid and bake for an additional 15 minutes until golden brown.
  11. Cool on a wire rack for at least 30 minutes before slicing.

Notes

For a more flavorful bread, let the dough rise slowly in the refrigerator overnight. If you don’t have a Dutch oven, use a baking stone with a pan of water.
