- 60ml Extra Virgin Olive Oil
- 2 tbsp Capers, rinsed and drained
- Zest of 1 Lemon
- Salt and Pepper to taste
- Fresh Parsley, chopped for garnish
- Optional: 200g Roasted Shrimp
Instructions
- Cook the Spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente.
- Sauté Garlic: While the spaghetti cooks, heat olive oil in a skillet over medium heat. Add minced garlic and sauté for about 1-2 minutes until fragrant.
- Add Capers and Lemon Zest: Toss in the capers and lemon zest, stirring together for an additional 1-2 minutes.
- Combine with Spaghetti: Drain the cooked spaghetti, reserving some pasta water. Add spaghetti to the skillet and toss to combine. Add reserved pasta water if needed.
- Season to Taste: Sprinkle with salt and pepper, adjusting according to your palate.
- Finish with Freshness: Remove from heat and garnish with chopped parsley and extra capers.
- Add Shrimp (Optional): Toss in roasted shrimp for added protein.
