Ingredients

- 1 box of brownie mix
- 1/4 cup of water
- 1/4 cup of vegetable oil
- 2 large eggs
- 8 oz cream cheese, softened
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1/2 cup sour cream
- Chocolate chips (optional)
- Whipped cream (for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the brownie mix with the water, vegetable oil, and eggs until smooth.
- Line your muffin tin with cupcake liners.
- Fill each liner halfway with the brownie batter.
- Beat the softened cream cheese, sugar, and vanilla until creamy.
- Fold in the sour cream into the cream cheese mixture.
- Spoon the cheesecake mixture over the brownie batter in each cup.
- Top with chocolate chips if desired.
- Bake for 18-20 minutes until the cheesecake is set but slightly jiggly.
- Cool for a few minutes, then transfer to a wire rack.
- Chill for at least 2 hours before serving.
- Serve with whipped cream on top.
Notes
Make-ahead: Prepare the brownie base a day in advance. You can also use low-fat cream cheese or Greek yogurt.
