Ingredients

- 1 cup quinoa
- 2 cups water
- 1 cucumber, diced
- 1 bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1 cup Kalamata olives, pitted and sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Rinse the quinoa in cold water using a fine-mesh strainer.
- Cook the quinoa in a medium pot with 2 cups of water, bringing it to a boil, then simmer for 15 minutes.
- Combine the cooled quinoa, cucumber, bell pepper, cherry tomatoes, red onion, olives, feta, and parsley in a large bowl.
- Make the dressing by whisking together olive oil, lemon juice, salt, and pepper in a separate bowl.
- Toss the dressing with the salad ingredients until well combined. Serve chilled or at room temperature.
