Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa in cold water using a fine-mesh strainer.
  2. Cook the quinoa in a medium pot with 2 cups of water, bringing it to a boil, then simmer for 15 minutes.
  3. Combine the cooled quinoa, cucumber, bell pepper, cherry tomatoes, red onion, olives, feta, and parsley in a large bowl.
  4. Make the dressing by whisking together olive oil, lemon juice, salt, and pepper in a separate bowl.
  5. Toss the dressing with the salad ingredients until well combined. Serve chilled or at room temperature.

Notes

Taste better after a few hours in the fridge, allowing flavors to meld. Serve immediately after dressing for best texture.
