Description

A vibrant and refreshing slaw made with sweet corn, crisp vegetables, and a creamy dressing, capturing the essence of Mexican cuisine.

Ingredients

Scale
  • 4 cups corn (fresh, canned, or frozen)
  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Combine corn, diced red bell pepper, finely chopped red onion, and chopped cilantro in a large mixing bowl. Toss gently.
  2. Whisk together the mayonnaise, lime juice, chili powder, salt, and pepper in a separate bowl until smooth.
  3. Pour the dressing over the corn mixture and toss carefully until well-coated.
  4. Serve immediately or refrigerate for 30 minutes for flavors to meld.

Notes

For a lighter version, swap mayonnaise for Greek yogurt or a vegan alternative. Fresh corn is best for flavor, but frozen works well too.
