  • 1 cup mint chocolate chips
  • 1 cup heavy cream
  • 1 teaspoon peppermint extract
  • 2 cups powdered sugar
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Melt the butter in a large mixing bowl and stir in the granulated sugar until blended.
  3. Add the eggs one at a time, mixing each thoroughly, then mix in the vanilla extract.
  4. Gently stir in the flour, cocoa powder, and salt until just combined.
  5. Fold in the mint chocolate chips delicately.
  6. Pour the batter into the prepared baking dish and spread it out evenly.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the brownies to cool for at least 30 minutes.
  9. Whip the heavy cream until soft peaks form, then mix in peppermint extract and powdered sugar.
  10. Spread the mint layer generously over the cooled brownies.
  11. Melt the semi-sweet chocolate chips and pour over the mint layer.
  12. Allow the whole creation to cool completely before slicing into squares.
