Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- Melt the butter in a large mixing bowl and stir in the granulated sugar until blended.
- Add the eggs one at a time, mixing each thoroughly, then mix in the vanilla extract.
- Gently stir in the flour, cocoa powder, and salt until just combined.
- Fold in the mint chocolate chips delicately.
- Pour the batter into the prepared baking dish and spread it out evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the brownies to cool for at least 30 minutes.
- Whip the heavy cream until soft peaks form, then mix in peppermint extract and powdered sugar.
- Spread the mint layer generously over the cooled brownies.
- Melt the semi-sweet chocolate chips and pour over the mint layer.
- Allow the whole creation to cool completely before slicing into squares.
