Instructions
- Combine the granola, peanut butter, honey (or maple syrup), chocolate chips, and vanilla extract in a mixing bowl. Stir until the mixture binds together nicely.
- Line a muffin tin with cupcake liners.
- Spoon the granola mixture evenly into the lined cups, pressing down firmly with the back of the spoon.
- Refrigerate for at least 30 minutes to firm up.
- Once set, carefully remove the cups from the muffin tin and store them in an airtight container.
