Deliciously chewy oatmeal raisin bars filled with sweet bursts of raisins and warm notes of cinnamon.

- 1 cup rolled oats
- 1/2 cup all-purpose flour
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1/2 cup raisins
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 egg
Instructions
- Preheat your oven to 350°F (175°C). Prepare your 8×8 inch baking dish by lining it with parchment paper.
- Cream the softened butter with brown sugar and granulated sugar until light and fluffy, about 3-4 minutes.
- Beat in the egg and vanilla extract until smooth and creamy.
- Whisk together the rolled oats, flour, baking soda, cinnamon, and salt in a separate bowl.
- Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
- Fold in the raisins gently.
- Spread the batter evenly in the prepared baking dish.
- Bake for 20-25 minutes, or until the edges are golden brown and a toothpick comes out clean.
- Allow to cool for at least 15 minutes before cutting into bars.
Notes
Customize by adding nuts or chocolate chips. Store in an airtight container for up to three days.
