Description

Deliciously chewy oatmeal raisin bars filled with sweet bursts of raisins and warm notes of cinnamon.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1/2 cup raisins
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 egg

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare your 8×8 inch baking dish by lining it with parchment paper.
  2. Cream the softened butter with brown sugar and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Beat in the egg and vanilla extract until smooth and creamy.
  4. Whisk together the rolled oats, flour, baking soda, cinnamon, and salt in a separate bowl.
  5. Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
  6. Fold in the raisins gently.
  7. Spread the batter evenly in the prepared baking dish.
  8. Bake for 20-25 minutes, or until the edges are golden brown and a toothpick comes out clean.
  9. Allow to cool for at least 15 minutes before cutting into bars.

Notes

Customize by adding nuts or chocolate chips. Store in an airtight container for up to three days.
