Instructions

  2. Add the chopped onions and sauté until translucent, about 3–5 minutes.
  3. Sprinkle the flour over the onions, whisking until a light roux forms, about 1 minute.
  4. Pour in the diced tomatoes with their juices and stock, stirring to combine.
  5. Simmer the mixture for about 5 minutes to meld the flavors.
  6. Stir in the cream or milk to create a silky richness.
  7. Season with salt, pepper, and hot sauce to taste.
