Instructions
- Melt the butter or bacon grease in a heavy-bottomed skillet over medium heat until bubbly.

- Sprinkle the flour over the onions, whisking until a light roux forms, about 1 minute.
- Pour in the diced tomatoes with their juices and stock, stirring to combine.
- Simmer the mixture for about 5 minutes to meld the flavors.
- Stir in the cream or milk to create a silky richness.
- Season with salt, pepper, and hot sauce to taste.
