Description

A nostalgic dessert featuring layers of creamy custard and golden puff pastry, finished with a tangy passionfruit glaze.


Ingredients

  • 1 cup milk
  • 2 cups cream
  • 1 cup sugar
  • 1/2 cup cornstarch
  • 4 egg yolks
  • 1 tsp vanilla extract
  • 1/4 cup passionfruit pulp
  • 1/2 cup icing sugar
  • 1 sheet of puff pastry

Instructions

  1. Preheat your oven to 200°C (390°F).
  2. Roll out the puff pastry on a floured surface and line your baking dish.
  3. Bake for 15-20 minutes until golden and let cool.
  4. Combine milk, cream, and sugar in a saucepan over medium heat, stirring until dissolved.
  5. Mix cornstarch and egg yolks in a bowl, then temper with warm milk mixture.
  6. Add the tempered mixture back to the saucepan and cook, stirring until thickened.
  7. Stir in vanilla extract and pour the custard over the baked pastry.
  8. Cool at room temperature and refrigerate for at least 2 hours to set.
  9. Mix passionfruit pulp and icing sugar for the glaze, then spread over the custard.
  10. Chill again before serving.

Notes

For best results, let the Vanilla Slice set overnight in the fridge. Add fresh berries for a delightful twist.
