- 1 cup milk
- 2 cups cream
- 1 cup sugar
- 1/2 cup cornstarch
- 4 egg yolks
- 1 tsp vanilla extract
- 1/4 cup passionfruit pulp
- 1/2 cup icing sugar
- 1 sheet of puff pastry
Instructions
- Preheat your oven to 200°C (390°F).
- Roll out the puff pastry on a floured surface and line your baking dish.
- Bake for 15-20 minutes until golden and let cool.
- Combine milk, cream, and sugar in a saucepan over medium heat, stirring until dissolved.
- Mix cornstarch and egg yolks in a bowl, then temper with warm milk mixture.
- Add the tempered mixture back to the saucepan and cook, stirring until thickened.
- Stir in vanilla extract and pour the custard over the baked pastry.
- Cool at room temperature and refrigerate for at least 2 hours to set.
- Mix passionfruit pulp and icing sugar for the glaze, then spread over the custard.
- Chill again before serving.
Notes
For best results, let the Vanilla Slice set overnight in the fridge. Add fresh berries for a delightful twist.
