Ingredients

  • 2 skinless, boneless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 cup corn kernels
  • 1 can black beans, rinsed and drained
  • 1 cup diced tomatoes
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken breasts generously with cumin, chili powder, salt, and pepper.
  3. Add the seasoned chicken to the skillet and cook for about 5-6 minutes on each side until golden brown.
  4. Remove the chicken from the skillet and set it aside.
  5. Toss in the chopped bell peppers, corn, black beans, and diced tomatoes; cook for about 5 minutes.
  6. Slice the chicken into strips and add it back to the skillet.
  7. Stir everything together and allow flavors to meld for an additional 2-3 minutes.
  8. Garnish with freshly chopped cilantro before serving.
