- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 cup corn kernels
- 1 can black beans, rinsed and drained
- 1 cup diced tomatoes
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Season the chicken breasts generously with cumin, chili powder, salt, and pepper.
- Add the seasoned chicken to the skillet and cook for about 5-6 minutes on each side until golden brown.
- Remove the chicken from the skillet and set it aside.
- Toss in the chopped bell peppers, corn, black beans, and diced tomatoes; cook for about 5 minutes.
- Slice the chicken into strips and add it back to the skillet.
- Stir everything together and allow flavors to meld for an additional 2-3 minutes.
- Garnish with freshly chopped cilantro before serving.
