Ingredients

  • 2 filet mignon steaks (68 oz each)
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • Fresh herbs (such as thyme or rosemary)
  • Salt and pepper to taste

Instructions

  1. Remove the filet mignon from the refrigerator and let it come to room temperature for about 30 minutes.
  2. Season both sides of the steaks generously with salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat until hot.
  4. Add the steaks to the skillet and sear for 4-5 minutes on each side for medium-rare.
  5. In the last minute of cooking, add the butter, garlic, and herbs to the skillet.
  6. Baste the steaks with the melted garlic butter for extra flavor.
  7. Remove the steaks from the skillet and let them rest for 5 minutes before serving.

  • Letting the steak rest allows the juices to redistribute.
