Description

Delightful muffins infused with peanut butter, ripe bananas, and chocolate chips, perfect for any occasion.


Ingredients

  • 2 ripe bananas, mashed
  • 1/2 cup peanut butter
  • 1/4 cup honey or maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup flour (all-purpose or whole wheat)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a muffin tin by lining it with paper liners, or grease it lightly.
  2. Mix the mashed bananas and peanut butter together until smooth.
  3. Add in honey (or maple syrup), egg, and vanilla extract. Stir well until fully blended.
  4. Combine flour, baking soda, and salt in another bowl, then gradually fold this mixture into the wet ingredients until just combined.
  5. Fold in the chocolate chips.
  6. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  7. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let them cool in the pan for about 5 minutes before transferring to a wire rack.

Notes

For fluffier muffins, do not overmix the batter. You can also make the batter a day in advance and store it in the fridge.
