Ingredients

- 2 ripe bananas, mashed
- 1/2 cup peanut butter
- 1/4 cup honey or maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup flour (all-purpose or whole wheat)
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Prepare a muffin tin by lining it with paper liners, or grease it lightly.
- Mix the mashed bananas and peanut butter together until smooth.
- Add in honey (or maple syrup), egg, and vanilla extract. Stir well until fully blended.
- Combine flour, baking soda, and salt in another bowl, then gradually fold this mixture into the wet ingredients until just combined.
- Fold in the chocolate chips.
- Divide the batter evenly among the muffin cups, filling each about 2/3 full.
- Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let them cool in the pan for about 5 minutes before transferring to a wire rack.
Notes
For fluffier muffins, do not overmix the batter. You can also make the batter a day in advance and store it in the fridge.
