- 2 discs of pie crust
- 2 lbs fresh yellow peaches (about 6–7 peaches)
- 2 tbsp lemon juice or lime juice
- 3/4 cup white granulated sugar
- 1/4 cup + 1 tbsp tapioca starch
- 1 tsp vanilla extract
- 1 tsp smoked or regular paprika
- 1 tbsp unsalted butter (for topping)
- 1 tbsp white granulated sugar (for topping)
- 1 egg yolk + 1 tbsp milk (for egg wash)
Instructions
- Prepare your pie crust. Make it from scratch using your favorite recipe, or unroll your store-bought dough.
- Peel and slice the peaches into 1-inch cubes.
- Combine the peaches with lemon juice, sugar, tapioca starch, vanilla extract, and paprika or cinnamon in a large mixing bowl.
- Preheat your oven to 400°F (200°C).
- Roll out one disc of pie dough, creating a circle that fits your 9-inch pie dish perfectly.
- Pour the peach mixture into the crust, letting it overflow slightly.
- Roll out the second disc of pie dough, then cut it into strips to form a lattice topping.
- Brush the top with an egg wash mixture of egg yolk and milk. Sprinkle with sugar and dot with butter.
- Bake your pie for 40-50 minutes, or until the filling bubbles and the crust turns golden brown.
Notes
For a crisp crust, avoid using overly juicy peaches and consider pre-baking your bottom crust for 10-15 minutes.
