Ingredients

  • 2 lbs pork belly
  • 1/4 cup brown sugar
  • 1/4 cup paprika
  • 1 tbsp black pepper
  • 1 tbsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 cup barbecue sauce
  • Wood chips (for smoking, optional)

Instructions

  1. Preheat your grill to 225°F (107°C).
  2. Cut the pork belly into 1-inch cubes.
  3. Combine brown sugar, paprika, black pepper, salt, garlic powder, and onion powder in a bowl.
  4. Rub the spice mixture all over the pork belly cubes.
  5. Smoke the pork belly bites on the grill for 2-3 hours.
  6. Remove the bites from the grill and toss them in barbecue sauce.
  7. Return the sauced bites to the grill and cook for another 30 minutes to 1 hour.
  8. Serve warm and enjoy!

Notes

Make the spice rub a day in advance for added flavor. If you don’t have a grill, an oven can be used as an alternative.
