- 2 lbs pork belly
- 1/4 cup brown sugar
- 1/4 cup paprika
- 1 tbsp black pepper
- 1 tbsp salt
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 cup barbecue sauce
- Wood chips (for smoking, optional)
Instructions
- Preheat your grill to 225°F (107°C).
- Cut the pork belly into 1-inch cubes.
- Combine brown sugar, paprika, black pepper, salt, garlic powder, and onion powder in a bowl.
- Rub the spice mixture all over the pork belly cubes.
- Smoke the pork belly bites on the grill for 2-3 hours.
- Remove the bites from the grill and toss them in barbecue sauce.
- Return the sauced bites to the grill and cook for another 30 minutes to 1 hour.
- Serve warm and enjoy!
Notes
Make the spice rub a day in advance for added flavor. If you don’t have a grill, an oven can be used as an alternative.
