Description

Ranch Chicken Enchiladas are a delicious and easy-to-make dinner option that combines tender chicken with a creamy ranch sauce, all wrapped in tortillas and topped with cheese.


Ingredients

  • 2 cups cooked shredded chicken
  • 1 cup ranch dressing
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 8 small flour tortillas
  • 1 can (10 oz) enchilada sauce
  • 1/2 cup diced green onions
  • 1/2 cup diced tomatoes (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the shredded chicken with ranch dressing and half of the cheese.
  3. Place a portion of the chicken mixture in each tortilla, roll them up, and place them seam-side down in a baking dish.
  4. Pour the enchilada sauce over the rolled tortillas.
  5. Sprinkle the remaining cheese on top.
  6. Bake for 20-25 minutes or until the cheese is melted and bubbly.
  7. Garnish with diced green onions and tomatoes before serving.

Notes

  • For a spicier version, add jalapeños to the chicken mixture.
