- 2 cups cooked shredded chicken
- 1 cup ranch dressing
- 1 cup shredded cheese (cheddar or Mexican blend)
- 8 small flour tortillas
- 1 can (10 oz) enchilada sauce
- 1/2 cup diced green onions
- 1/2 cup diced tomatoes (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the shredded chicken with ranch dressing and half of the cheese.
- Place a portion of the chicken mixture in each tortilla, roll them up, and place them seam-side down in a baking dish.
- Pour the enchilada sauce over the rolled tortillas.
- Sprinkle the remaining cheese on top.
- Bake for 20-25 minutes or until the cheese is melted and bubbly.
- Garnish with diced green onions and tomatoes before serving.
Notes
- For a spicier version, add jalapeños to the chicken mixture.
- These enchiladas can be made ahead of time and stored in the refrigerator before baking.
- Serve with a side of sour cream or guacamole for added flavor.
