Ingredients

  • 22 chocolate sandwich cookies (such as Oreos)
  • 1/4 cup (4 tablespoons) melted butter (vegan or regular)
  • 2 (13.5 oz) cans full fat coconut milk (only the thick cream)
  • 1/2 cup Domino®️ Golden Sugar
  • 12 oz semisweet chocolate, chopped
  • 1/4 teaspoon salt
  • 1 pint fresh raspberries

Instructions

  1. Prep the crust: Add the chocolate cookies and melted butter to a food processor. Pulse until fine crumbs form. Press the mixture into a tart pan, then freeze.
  2. Extract the coconut cream: Scoop the thick layer from the coconut milk cans.
  3. Combine the coconut cream and sugar in a saucepan over medium heat, stirring often until dissolved.
  4. Melt the chocolate by pouring the hot coconut cream mixture over it and letting it rest.
  5. Whisk until smooth and glossy.
  6. Assemble the tart by pouring the filling into the crust and topping with raspberries.
  7. Set in the refrigerator for at least 240 minutes before serving.

Notes

Make-ahead: Prepare a day in advance for best results. Consider using an air fryer for a quicker crust.
