Instructions
- Heat the olive oil in a heavy skillet over medium-high heat until shimmering.
- Generously season the pork chops on both sides with salt and pepper.
- Add the pork chops to the skillet, searing for about 4-5 minutes on each side until golden brown.
- Combine the brown sugar, soy sauce, apple cider vinegar, and minced garlic in a small bowl to make the glaze.
- Pour the sauce over the seared pork chops, reducing the heat to medium and simmering for 5-7 minutes.
- Serve hot, garnished with fresh thyme if desired.

For enhanced flavors, marinate the pork chops in the sauce for a few hours or overnight.
