- 1 cup diced leg ham
- 1 ½ cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ cup milk
- ¼ cup vegetable oil
- 2 large eggs
- ½ cup grated cheese (optional)
Instructions
- Preheat your oven to 180°C (350°F) and line your muffin tin with paper cases.
- Whisk together the flour, baking powder, salt, and black pepper in a mixing bowl.
- In another bowl, whisk together the milk, vegetable oil, and eggs until well blended.
- Pour the wet mixture into the dry ingredients and mix gently until just combined.
- Fold in the corn and diced ham (adding cheese if desired).
- Spoon the batter into the muffin cases, filling them about two-thirds full.
- Bake for 20-25 minutes until golden brown and a toothpick comes out clean.
- Allow the muffins to cool slightly before serving warm.
Notes
These muffins freeze well and can be stored in the fridge for about a week. Make sure to let them cool completely before freezing.
