Description

Deliciously moist muffins filled with sweet corn and savory ham, perfect for breakfast, brunch, or as a snack.


Ingredients

  • 1 cup corn kernels (fresh or canned)
  • 1 cup diced leg ham
  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup milk
  • ¼ cup vegetable oil
  • 2 large eggs
  • ½ cup grated cheese (optional)

Instructions

  1. Preheat your oven to 180°C (350°F) and line your muffin tin with paper cases.
  2. Whisk together the flour, baking powder, salt, and black pepper in a mixing bowl.
  3. In another bowl, whisk together the milk, vegetable oil, and eggs until well blended.
  4. Pour the wet mixture into the dry ingredients and mix gently until just combined.
  5. Fold in the corn and diced ham (adding cheese if desired).
  6. Spoon the batter into the muffin cases, filling them about two-thirds full.
  7. Bake for 20-25 minutes until golden brown and a toothpick comes out clean.
  8. Allow the muffins to cool slightly before serving warm.

Notes

These muffins freeze well and can be stored in the fridge for about a week. Make sure to let them cool completely before freezing.
