- 8 oz whole wheat pasta
- 1 cup cooked chicken, diced
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup bell peppers, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup olives, sliced
- 1/2 cup Italian dressing
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil. Carefully add in the whole wheat pasta and cook according to package instructions until al dente. Drain it in a colander and let it cool completely.
- Prepare the veggies: In a large mixing bowl, combine the diced chicken, halved cherry tomatoes, diced cucumber, bell peppers, finely chopped red onion, and sliced olives.
- Combine: Add the cooled pasta to the veggie mixture. Drizzle the Italian dressing over the top, allowing the flavors to meld together. Gently toss everything until evenly coated.
- Season: Sprinkle salt and pepper as needed. Taste and adjust to enhance vibrant flavors.
- Garnish: Chop fresh basil and sprinkle it over the salad.
- Chill: Ideally, let the salad chill in the refrigerator for about 30 minutes.
