- 1 red bell pepper, chopped

Instructions
- Sauté the chopped onion and bell pepper in 2 tablespoons of olive oil over medium heat for 3–5 minutes.
- Brown the ground beef, breaking it apart, and drain any excess fat.
- Add the diced potatoes and season with salt and pepper.
- Incorporate the sloppy joe sauce, stir to combine, cover, and cook for 15–20 minutes.
- Melt the cheese over the skillet and cover for 3–5 minutes until gooey.
- Serve warm and enjoy!
