Description

Delightful Sourdough Croissant Bread that combines the tangy flavor of sourdough with the flaky, buttery texture of croissant dough.


Ingredients

  • 4 cups all-purpose flour (or bread flour)
  • 2 tablespoons sugar
  • 1.5 teaspoons salt
  • 1 tablespoon yeast
  • 1 cup active sourdough starter
  • 1 cup warm milk (or almond/oat milk)
  • ½ cup warm water
  • 1 cup unsalted butter (softened)

Instructions

  1. Activate your sourdough starter: Place your starter out at room temperature for 4–6 hours prior to beginning the recipe.
  2. Mix dry ingredients: In a large mixing bowl, combine flour, sugar, salt, and yeast. Whisk them together.
  3. Incorporate wet ingredients: Pour in warm milk and water. Add your active sourdough starter. Mix gently.
  4. Knead the dough: Transfer to a floured surface and knead for 10–15 minutes until smooth.
  5. First rise: Place in a greased bowl, cover, and let rise until doubled—about 1–2 hours.
  6. Shape the dough: Roll into a rectangle approximately ½ inch thick.
  7. Prepare the butter: Soften and shape it into a rectangle that fits the bottom two-thirds of the dough.
  8. Enclose the butter: Fold the top third of the dough down over the butter.
  9. Roll out again: Roll into a rectangle ensuring not to press too hard.
  10. Repeat folds: Fold into thirds like a letter and roll it out again, repeating this twice more.
  11. Second rise: Shape into a loaf and let rise until doubled—about one hour.
  12. Preheat the oven: Heat to 400°F (200°C).
  13. Bake: Place on baking sheet and bake for 25-30 minutes until golden brown.
  14. Cool: Allow to cool on a wire rack before slicing.

Make-ahead tips: Prepare the dough a day in advance and refrigerate overnight after the first rise.
