Description
Delightful homemade croissants filled with savory ham and gooey cheese, enveloped in flaky sourdough pastry.
Ingredients
Scale
- 2 cups sourdough starter
- 3 cups all-purpose flour
- 1/2 cup cold butter, cut into cubes
- 1 cup shredded cheese (Swiss or cheddar)
- 1 cup sliced ham
- 1/4 cup sugar
- 1/2 cup milk
- 1 egg (for egg wash)
- 1 teaspoon salt
- 1 tablespoon yeast (optional)
Instructions
- Combine the sourdough starter, sugar, and milk in a large bowl, stirring until blended.
- Add the flour and salt gradually, mixing until a soft, slightly tacky dough forms.
- Knead the dough on a floured surface for 5-7 minutes until smooth and elastic.
- Roll the dough into a rectangle about half an inch thick and spread cold butter over two-thirds.
- Fold the dough like a letter to encase the butter and seal the edges.
- Refrigerate the dough for 30 minutes.
- Roll out the dough again and cut into triangles. Place ham and cheese on each triangle.
- Roll the triangles from the wide end to the point to form croissants.
- Arrange on a baking sheet and let rise for 20-30 minutes.
- Preheat the oven to 375°F (190°C). Brush with egg wash and bake for 20-25 minutes until golden brown.
- Serve warm and enjoy!
Notes
Make ahead by preparing the dough in advance and refrigerating overnight for deeper flavors.
