Description

Delightful homemade croissants filled with savory ham and gooey cheese, enveloped in flaky sourdough pastry.


Ingredients

  • 2 cups sourdough starter
  • 3 cups all-purpose flour
  • 1/2 cup cold butter, cut into cubes
  • 1 cup shredded cheese (Swiss or cheddar)
  • 1 cup sliced ham
  • 1/4 cup sugar
  • 1/2 cup milk
  • 1 egg (for egg wash)
  • 1 teaspoon salt
  • 1 tablespoon yeast (optional)

Instructions

  1. Combine the sourdough starter, sugar, and milk in a large bowl, stirring until blended.
  2. Add the flour and salt gradually, mixing until a soft, slightly tacky dough forms.
  3. Knead the dough on a floured surface for 5-7 minutes until smooth and elastic.
  4. Roll the dough into a rectangle about half an inch thick and spread cold butter over two-thirds.
  5. Fold the dough like a letter to encase the butter and seal the edges.
  6. Refrigerate the dough for 30 minutes.
  7. Roll out the dough again and cut into triangles. Place ham and cheese on each triangle.
  8. Roll the triangles from the wide end to the point to form croissants.
  9. Arrange on a baking sheet and let rise for 20-30 minutes.
  10. Preheat the oven to 375°F (190°C). Brush with egg wash and bake for 20-25 minutes until golden brown.
  11. Serve warm and enjoy!
