Description

Delightfully airy and crunchy sourdough popovers, perfect for brunch or snacking, utilizing sourdough discard for a unique flavor.


Ingredients

  • 1 cup sourdough discard
  • 1 cup milk
  • 4 large eggs
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 cup butter, melted
  • 1/4 cup sugar
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 425°F (220°C) and grease your popover pan or muffin tin with melted butter.
  2. Whisk the sourdough discard, milk, and eggs in a large bowl until frothy.
  3. Mix the flour and salt in a separate bowl until combined.
  4. Combine the dry ingredients into the wet ingredients, stirring gently until just combined.
  5. Incorporate the melted butter into the batter, folding gently until smooth.
  6. Fill each cup of the greased pan about 3/4 full with batter.
  7. Bake for 20-25 minutes until golden and puffed, avoiding opening the oven door.
  8. Finish by brushing with melted butter and sprinkling with cinnamon-sugar before serving warm.

Notes

For best results, enjoy immediately but can be stored for up to two days in an airtight container or frozen for longer storage.
