- 1 cup sourdough discard
- 1 cup milk
- 4 large eggs
- 1 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 cup butter, melted
- 1/4 cup sugar
- 1 teaspoon cinnamon
Instructions
- Preheat your oven to 425°F (220°C) and grease your popover pan or muffin tin with melted butter.
- Whisk the sourdough discard, milk, and eggs in a large bowl until frothy.
- Mix the flour and salt in a separate bowl until combined.
- Combine the dry ingredients into the wet ingredients, stirring gently until just combined.
- Incorporate the melted butter into the batter, folding gently until smooth.
- Fill each cup of the greased pan about 3/4 full with batter.
- Bake for 20-25 minutes until golden and puffed, avoiding opening the oven door.
- Finish by brushing with melted butter and sprinkling with cinnamon-sugar before serving warm.
Notes
For best results, enjoy immediately but can be stored for up to two days in an airtight container or frozen for longer storage.
