Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 2 tablespoons berbere spice
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 2 tablespoons olive oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat olive oil over medium heat.
  3. Add chopped onion and sauté until translucent.
  4. Stir in garlic and ginger, cooking for an additional minute.
  5. Add berbere spice and cook for another minute to release the flavors.
  6. Pour in the vegetable broth and diced tomatoes, then bring to a boil.
  7. Add the lentils and reduce heat to a simmer.
  8. Cook for 20-25 minutes, or until lentils are tender.
  9. Season with salt to taste.
  10. Serve hot, garnished with fresh cilantro.

Notes

  • Adjust the spice level by adding more or less berbere spice.
  • Serve with injera or rice for a complete meal.
