Ingredients

- 1 cup red lentils
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons berbere spice
- 4 cups vegetable broth
- 1 can diced tomatoes
- 2 tablespoons olive oil
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Rinse the lentils under cold water and set aside.
- In a large pot, heat olive oil over medium heat.
- Add chopped onion and sauté until translucent.
- Stir in garlic and ginger, cooking for an additional minute.
- Add berbere spice and cook for another minute to release the flavors.
- Pour in the vegetable broth and diced tomatoes, then bring to a boil.
- Add the lentils and reduce heat to a simmer.
- Cook for 20-25 minutes, or until lentils are tender.
- Season with salt to taste.
- Serve hot, garnished with fresh cilantro.
Notes
- Adjust the spice level by adding more or less berbere spice.
- Serve with injera or rice for a complete meal.
- This dish can be made ahead and stored in the refrigerator for up to 3 days.
