Description

Brightly colored, crisp, and impossibly fresh, Spicy Slaw dazzles the senses with a whirlwind of textures and flavors.

Ingredients

Scale
  • 1 medium green cabbage, shredded
  • 2 large carrots, grated
  • 1 red bell pepper, thinly sliced
  • 1 jalapeño, seeded and minced
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon sugar
  • Salt and pepper to taste

Instructions

  1. Prepare the vegetables: In a large mixing bowl, combine the shredded cabbage, grated carrots, sliced red bell pepper, and minced jalapeño. Use your hands or tongs to gently toss everything together.
  2. Whisk the dressing: In a separate bowl, whisk together the mayonnaise, apple cider vinegar, lime juice, and sugar until smooth.
  3. Combine the dressing and vegetable mixture, tossing gently to coat each piece.
  4. Season with salt and pepper to taste.
  5. Rest the slaw in the refrigerator for at least 30 minutes before serving.

Notes

Make-ahead tips: Prepare the slaw a day in advance for deeper flavor. To add smoky flavor, grill the vegetables lightly before mixing them into the slaw.
