Ingredients

  • 2 cups water
  • 1 tablespoon rice vinegar

  • 8 ounces sushi-grade tuna, diced
  • 2 tablespoons mayonnaise
  • 1 tablespoon sriracha sauce
  • 1 avocado, sliced
  • Green onions, for garnish

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear.
  2. In a pot, combine the rinsed rice and water, and bring to a boil.
  3. Reduce heat, cover, and simmer for 20 minutes or until the rice is tender.
  4. In a small bowl, mix rice vinegar, sugar, and salt until dissolved, then fold into the cooked rice.
  5. Spread the rice on a baking sheet to cool.
  6. Once cooled, form the rice into small cakes and fry them in a pan until crispy on both sides.
  7. In another bowl, combine diced tuna, mayonnaise, and sriracha sauce.
  8. Top each crispy rice cake with the spicy tuna mixture and a slice of avocado.
  9. Garnish with green onions and sesame seeds before serving.
