- 1 package (3 oz) berry-flavored gelatin
- 1 cup boiling water
- 1 cup cold water
- 2 cups whipped topping
- 1 package (8 oz) cream cheese, softened
- 1 cup powdered sugar
- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups mixed fresh berries (strawberries, blueberries, raspberries)
Instructions
- Begin by pouring 1 cup of boiling water over the packet of berry-flavored gelatin in a medium mixing bowl. Stir gently until the gelatin dissolves completely, then mix in 1 cup of cold water. Set this mixture aside to cool for a few minutes—but don’t let it set!
- In a separate bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar, mixing until fluffy and well incorporated. Fold in the whipped topping gently, creating a light and airy consistency.
- Combine the graham cracker crumbs with the melted butter in a mixing bowl. Stir until evenly blended, then press this mixture firmly into the bottom of a 9×13 inch pan to form the crust.
- Layer half of the luscious cream cheese mixture over the crust, smoothing it out nicely. Pour half of the cooled gelatin mixture over the cream cheese layer, then pop the dish into the refrigerator for at least 2 hours, allowing it to set fully.
- Once the first layer has set, scatter the mixed berries evenly over the top. Pour the remaining cream cheese mixture over the layer of berries, making sure to spread it evenly. Finish by pouring the last of the gelatin mixture on top.
- Return the dish to the fridge and let it set completely for about 4 hours, allowing the flavors to meld together in the most exquisite way.
- When you’re ready to indulge, slice this summer beauty into squares and serve chilled.
