- 1 medium fresh pineapple, peeled, cored, and diced (about 4 cups)
- 1 1/2 cups granulated sugar
- 3/4 cup apple cider vinegar
- 1 1/2 teaspoons red pepper flakes
- 1/2 teaspoon ground ginger
- Fresh mint leaves, chopped (optional)
Instructions
- Combine the diced pineapple with the granulated sugar in a large mixing bowl. Stir gently and let it sit for about an hour.
- Transfer the pineapple mixture into a heavy-bottomed saucepan. Pour in the apple cider vinegar, followed by the red pepper flakes and ground ginger. Stir everything together thoroughly.
- Heat the mixture over medium heat, stirring occasionally to prevent sticking, and cook until the candy thickens to a syrupy consistency (about 30 to 40 minutes).
- Remove the pan from the heat and allow the mixture to cool down completely to room temperature.
- Pour the cooled candy into clean jars, sealing them tightly. Optionally garnish with freshly chopped mint leaves before serving.
Notes
Store in airtight jars in the refrigerator for up to a month. Can be used as a glaze for grilled meats or paired with desserts.
