Description

Ingredients

  • 1 medium fresh pineapple, peeled, cored, and diced (about 4 cups)
  • 1 1/2 cups granulated sugar
  • 3/4 cup apple cider vinegar
  • 1 1/2 teaspoons red pepper flakes
  • 1/2 teaspoon ground ginger
  • Fresh mint leaves, chopped (optional)

Instructions

  1. Combine the diced pineapple with the granulated sugar in a large mixing bowl. Stir gently and let it sit for about an hour.
  2. Transfer the pineapple mixture into a heavy-bottomed saucepan. Pour in the apple cider vinegar, followed by the red pepper flakes and ground ginger. Stir everything together thoroughly.
  3. Heat the mixture over medium heat, stirring occasionally to prevent sticking, and cook until the candy thickens to a syrupy consistency (about 30 to 40 minutes).
  4. Remove the pan from the heat and allow the mixture to cool down completely to room temperature.
  5. Pour the cooled candy into clean jars, sealing them tightly. Optionally garnish with freshly chopped mint leaves before serving.

Notes

Store in airtight jars in the refrigerator for up to a month. Can be used as a glaze for grilled meats or paired with desserts.
