Ingredients
Scale
- 1 lb chicken breast, cut into bite-sized pieces
- 1 can (13.5 oz) coconut milk
- 2–3 tablespoons Thai green curry paste
- 1 bell pepper, sliced
- 1 cup green beans, trimmed
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- Fresh basil leaves, for garnish
- Cooked rice, for serving
Instructions
- Heat a skillet over medium heat. Add the coconut milk and Thai green curry paste, stirring until they meld together, creating a fragrant base.
- Introduce the bite-sized chicken pieces to the skillet. Cook for about 5-7 minutes, or until the chicken turns golden and is no longer pink.
- Toss in the sliced bell pepper and trimmed green beans, cooking for an additional 5 minutes, until the vegetables become tender yet still have a hint of crunch.
- Stir in the fish sauce and brown sugar, allowing it to simmer for a few more minutes as the flavors meld beautifully.
- Serve the curry hot over a bed of fluffy cooked rice, garnished with the fresh basil leaves that bring a final flourish of color and fragrance.
Notes
Feel free to substitute the chicken for tofu or shrimp. Adjust the curry paste to suit your spice preference.
