Ingredients

  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine 1 cup of peanut butter, 1 cup of brown sugar, and 1/2 cup of granulated sugar in a large mixing bowl until smooth.
  3. Add 1 large egg, 1 teaspoon of baking soda, 1 teaspoon of vanilla extract, and 1/4 teaspoon of salt. Stir until well incorporated.
  4. Drop generous spoonfuls of dough onto a baking sheet lined with parchment paper, leaving space between each.
  5. Bake for 10–12 minutes until edges are lightly golden and centers are slightly underbaked.
  6. Cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For thicker cookies, chill the dough for 30 minutes before baking. Try a fork to create a crisscross pattern before baking!
