Description

A creamy and velvety tropical dessert featuring coconut milk and toasted coconut flakes, perfect for gatherings and cozy evenings.


Ingredients

  • 1 cup coconut milk
  • 1 cup milk
  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup toasted coconut flakes
  • Whipped cream (for topping)

Instructions

  1. Combine the coconut milk, milk, sugar, cornstarch, and salt in a medium saucepan. Whisk over medium heat until smooth and pale.
  2. Continue stirring the mixture as it heats until it thickens and begins to bubble, about 5-7 minutes.
  3. Remove from heat and stir in the vanilla extract and half of the toasted coconut flakes.
  4. Pour the mixture into serving bowls and allow it to cool slightly before refrigerating.
  5. Chill for at least 2-3 hours until set.
  6. Top with whipped cream and sprinkle with the remaining toasted coconut flakes before serving.

Notes

This pudding can be made ahead of time and stored in an airtight container in the fridge for up to three days.
