- 1 cup grated zucchini
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup chocolate chips
- 1/2 cup vegetable oil
- 1/4 cup milk
- 2 large eggs
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- Whisk together the flour, cocoa powder, baking soda, baking powder, and salt in a large mixing bowl.
- Mix the sugar, brown sugar, vegetable oil, eggs, milk, and vanilla in a separate bowl until smooth.
- Fold in the grated zucchini and half of the chocolate chips into the wet mixture.
- Add the dry ingredients to the wet mixture, mixing just until incorporated. Do not over-mix.
- Divide the batter among the muffin cups, filling each three-quarters full. Sprinkle the remaining chocolate chips on top.
- Bake for 18-20 minutes or until a toothpick inserted comes out with a few moist crumbs.
- Allow to cool in the tin for about 10 minutes before transferring to a wire rack to cool completely.
Notes
For a lighter option, substitute vegetable oil with melted coconut oil or applesauce. For a gluten-free version, use almond flour or a gluten-free baking blend.
