Instructions
- Cook the orzo: Bring a pot of salted water to a boil and cook the orzo according to package instructions until it’s al dente. Drain the orzo thoroughly and set aside.
- Sauté the garlic: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until golden and fragrant.
- Add the zucchini: Introduce the diced zucchini to the skillet. Cook until tender but still slightly crunchy, about 5-7 minutes. Stir occasionally to ensure even cooking.
- Combine orzo and flavor: Stir in the drained orzo, followed by the zest and juice of the lemon. Season with salt and pepper to taste, blending well until all ingredients are perfectly combined.
- Garnish and serve: If desired, sprinkle with fresh parsley for added fragrance and color. Serve the dish warm and enjoy every delightful bite.
Notes
For a smoky flavor, try roasting the zucchini instead of sautéing. Make sure to taste and adjust seasoning while cooking.
